Spaghetti with Mascarpone, Meyer Lemon, Spinach & Walnuts

  • 1 tablespoon freshly squeezed Sunkist® Meyer lemon juice
  • 1 teaspoon minced garlic
  • 0.75 cup mascarpone cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon fresh ground black pepper
  • 0.5 pound dry spaghetti noodles
  • 5 ounces fresh baby spinach
  • 0.33 cup chopped toasted walnuts, optional


Preparation : 10 minutes

Cooking : 15 minutes


  1. Combine freshly squeezed Sunkist® Meyer lemon juice, garlic, cheese, salt, and pepper in a small bowl. Stir well and set aside.
  2. In a large pot, boil pasta according to package directions or until just al dente. Reserve 1/4 cup of water cooking the pasta. Drain pasta with remaining water, then return to cooking pot over medium-high heat.
  3. Stir in cheese mixture, reserved pasta water and fresh spinach.
  4. Stir gently until spinach is wilted and pasta is hot and coated well.
  5. Top with walnuts before serving, optional.
