  • 100g Unsalted Butter
  • 50g Brown Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 160g Cake Flour
  • 1/4 tsp Baking Soda
  • 1/2 tsp Sea Salt
  • 100g Chocolate Chips
  • 10g Navel Orange Zest

Directions

  1. Grate the zest of the navel orange and squeeze out 40g of orange juice, set aside.
  2. In a mixing bowl, combine the cream cheese, orange juice, and powdered sugar, and mix until well blended. Refrigerate for 30 minutes.
  3. Soften the butter and brown sugar in a mixing bowl using an electric mixer until combined.
  4. Add the egg and vanilla oil, then mix until evenly incorporated.
  5. Gradually add the cake flour, baking soda, and sea salt, using a spatula to form the dough.
  6. Fold in the chocolate chips and orange zest, mixing until well combined. Refrigerate the dough for 30 minutes.
  7. Preheat the oven to 180ºC (356ºF).
  8. Divide the dough into portions of about 70g each. Flatten each dough ball and wrap about 2 teaspoons of cheesecake filling in the center. Ensure the edges are sealed.
  9. Place orange slices on top of the cookies. Position the baking tray in the middle of the oven and bake for 10-12 minutes until golden, then allow to cool slightly before serving.
