Orange Cheesecake Cookies

- Grate the zest of the navel orange and squeeze out 40g of orange juice, set aside.
- In a mixing bowl, combine the cream cheese, orange juice, and powdered sugar, and mix until well blended. Refrigerate for 30 minutes.
- Soften the butter and brown sugar in a mixing bowl using an electric mixer until combined.
- Add the egg and vanilla oil, then mix until evenly incorporated.
- Gradually add the cake flour, baking soda, and sea salt, using a spatula to form the dough.
- Fold in the chocolate chips and orange zest, mixing until well combined. Refrigerate the dough for 30 minutes.
- Preheat the oven to 180ºC (356ºF).
- Divide the dough into portions of about 70g each. Flatten each dough ball and wrap about 2 teaspoons of cheesecake filling in the center. Ensure the edges are sealed.
- Place orange slices on top of the cookies. Position the baking tray in the middle of the oven and bake for 10-12 minutes until golden, then allow to cool slightly before serving.
