Chocolate Dipped Candied Orange Peels

Directions
- Rinse and dry oranges. Slice both ends off.
- Using a paring knife, carefully score each orange in quarters and then remove orange peel off each section trying not to get too much pith.
- Slice peel into ¼ inch strips.
- Add orange peels to pot and cover with water, sugar and stir. Bring to a boil.
- Turn down to a medium low heat until water reaches a soft simmer.
- Simmer for 45 minutes. Add vanilla before turning off heat and stir.
- Remove peels from syrup and cool on wire rack. Roll in sugar to coat.
- Enjoy immediately or dry for 4 hours or overnight.
- Dip candied orange peels one at a time in dark chocolate.
- Place on parchment paper to set up and harden. Keep in airtight container.
