Ingredients

  • 340g Cherry Tomatoes
  • 1 Sunkist Lemon
  • 4 Preserved Plums
  • 40g Rock Sugar
  • 400ml Water

Directions

  1. In a saucepan, add water, preserved plums, and rock sugar. Cover and simmer over low heat for about 10 minutes until the sugar dissolves. Let it cool down.
  2. Wash cherry tomatoes and score a cross on the skin using a knife. (Tip : A serrated knife makes this easier!)
  3. Blanch the tomatoes in hot water for 1 minute, then transfer to ice water. Peel and set aside.
  4. Squeeze the lemon juice and add 3 tbsp to the preserved plum syrup. Adjust to taste.
  5. Don’t waste the squeezed lemon! Chop it into small pieces and add it to the syrup.
  6. Add the peeled cherry tomatoes to the syrup, then refrigerate for at least 2 hours or overnight for the best flavor.
