Lemon and Preserved Plum Pickled Cherry Tomatoes

- In a saucepan, add water, preserved plums, and rock sugar. Cover and simmer over low heat for about 10 minutes until the sugar dissolves. Let it cool down.
- Wash cherry tomatoes and score a cross on the skin using a knife. (Tip : A serrated knife makes this easier!)
- Blanch the tomatoes in hot water for 1 minute, then transfer to ice water. Peel and set aside.
- Squeeze the lemon juice and add 3 tbsp to the preserved plum syrup. Adjust to taste.
- Don’t waste the squeezed lemon! Chop it into small pieces and add it to the syrup.
- Add the peeled cherry tomatoes to the syrup, then refrigerate for at least 2 hours or overnight for the best flavor.
