Lemon Pepper Prawns

Directions
- Rinse the prawns with running water for 3–5 minutes to slightly thaw.
- Juice the lemon and mix it with sugar and white pepper.
- Mince the garlic and chop the scallions into small dices.
- Use kitchen scissors to trim the sharp tip of the prawn head and remove the legs. Take out the stomach (dark green part) and use a toothpick to devein the prawns.
- Add the oil , heat up a frying pan over high heat, add the prawns, and cook until they turn orange.
- Pour in the lemon-pepper sauce and salt, stir well, then add rice wine. Cover and cook for 2-3 minutes or until the prawns are fully cooked and turn orange.
- Add the chopped scallions, toss well, and serve hot.
