Orange Duck Breast Soba Noodle Salad

Directions
- Wash the orange, remove the peel, and cut it into thin strips.
- Remove the white part and cut out the orange segments.
- Reserve half of the orange segments for cooking the duck breast, and chop the other half for the salad dressing.
- Mix the chopped orange segments, minced garlic, and other salad dressing seasonings in a bowl to make the salad dressing.
- Cut the cucumber into thin strips and peel and cut the carrot into thin strips.
- Wash the duck breast and pat it dry. Score the duck skin (be careful not to cut into the meat), and season both sides with a little salt and black pepper.
- Cook the soba noodles according to the package instructions, then rinse with cold water and let them cool.
- Heat a pan over medium-high heat, and sear the duck skin side first. Cook each side for about 3 minutes over medium heat.
- Add the orange segments and orange peel to the duck breast and cook for 1 minute, then remove from the pan. Cover with aluminum foil and let the duck breast rest for 5 minutes.
- Place the soba noodles on a plate and top with the cucumber and carrot strips.
- Slice the duck breast and place it on top of the soba noodles along with the orange segments.
- Drizzle with the salad dressing, mix well, and enjoy.
