Ingredients

  • 2 Duck Breast (400g)
  • 1 Sunkist Navel orange
  • 40g Cucumber
  • 30g Carrot
  • 2 bundles Soba Noodles
  • Salt & pepper (to taste)

Salad Dressing Ingredients

  • 3 tbsp Japanese Soy Sauce
  • 2 tbsp Water
  • 2-3 tbsp Rice Vinegar
  • 1 tbsp Sesame Oil
  • 2 cloves Garlic

Directions

  1. Wash the orange, remove the peel, and cut it into thin strips.
  2. Remove the white part and cut out the orange segments.
  3. Reserve half of the orange segments for cooking the duck breast, and chop the other half for the salad dressing.
  4. Mix the chopped orange segments, minced garlic, and other salad dressing seasonings in a bowl to make the salad dressing.
  5. Cut the cucumber into thin strips and peel and cut the carrot into thin strips.
  6. Wash the duck breast and pat it dry. Score the duck skin (be careful not to cut into the meat), and season both sides with a little salt and black pepper.
  7. Cook the soba noodles according to the package instructions, then rinse with cold water and let them cool.
  8. Heat a pan over medium-high heat, and sear the duck skin side first. Cook each side for about 3 minutes over medium heat.
  9. Add the orange segments and orange peel to the duck breast and cook for 1 minute, then remove from the pan. Cover with aluminum foil and let the duck breast rest for 5 minutes.
  10. Place the soba noodles on a plate and top with the cucumber and carrot strips.
  11. Slice the duck breast and place it on top of the soba noodles along with the orange segments.
  12. Drizzle with the salad dressing, mix well, and enjoy.
