PRAWNS IN ORANGE MAYONNAISE SAUCE

- Remove the head and shell of the prawn, keep the tail for better plating. Slice the back of the prawn to remove the intestine.
- Mix well and allow the prawns to marinate with salt, pepper powder and sesame oil for 15 minutes.
- Slice the Sunkist®Navel orange into half. Remove the zest and cut the orange into 6 pieces for one of the half. Set aside.
- Juice the other half of the orange and keep the pulps to elevate the texture.
- Mix orange juice with mayonnaise and condensed milk. Set aside.
- Coat the prawns with a thin layer of cornstarch evenly. Tap to remove excess cornstarch.
- Turn on medium heat and add oil, shallow-fry the prawn on both sides for around 2 minutes until it turns golden. Set the prawn aside.
- Remove the oil, add the orange Mayonnaise sauce to the pan. Gently stir until the sauce condenses.
- Add the prawns and the sliced oranges, stir and toss until the sauce dressing reduce.
