Chinese New Year “Leen Go” French Toast

Ingredients

  • 1 large baton CNY glutinous rice cake (any flavour)
  • 1 plate flour (for coating)
  • 2 eggs
  • 10 g square piece of butter
  • 0.5 Sunkist® Navel orange, sliced into wedges with skin removed
  • 0.5 Sunkist® Navel orange zest
  • 20 ml Sunkist® Navel orange juice
  • 50 ml golden syrup
  • 1 teaspoon orange liquor (optional)
  • 1 tablespoon cooking oil

Directions

  1. Preheat the oven to 170°C on a fan setting
  2. To make the “French Toast”, slice one generous baton of CNY glutinous rice cake and then dust liberally with flour
  3. Beat eggs in a bowl then dip the dusted cake into the eggs; repeat the dusting and egg-wash process once again for twice total
  4. On a saucepan over medium heat, add cooking oil then pan-fry all edges of the cake until golden brown and resembles a French toast, around 5-10 minutes
  5. Place the cake into the preheated oven for a further 15 minutes, or until a toothpick or skewer goes through effortlessly into the centre of the cake
  6. While the French toast is in the oven, prepare the orange in the following order:
    Zest half an orange;
    Cut half an orange into slices then remove skin carefully with a knife;
    Juice remainder of the orange
  7. Using a flame torch, gently torch the orange slices over a wire rack until slightly charred; set to one side
  8. To make the orange syrup, mix the orange zest, juice together with golden syrup and optionally orange liquor
  9. To assemble, place orange slices over the French toast then add a square piece of butter over the top; drizzle liberally with orange syrup at tableside for guests
    VARIATION:
    • Navel oranges can be replaced with cara cara oranges for a different aesthetic or even substituted partially with lemon for a more tart variation
