Lemon Shakshuka

  • 1 tablespoon olive oil
  • 0.5 onion, chopped
  • 3 garlic cloves, minced
  • 2 Sunkist® lemons, zested and juiced
  • 1 -32 ounce jar of marinara sauce
  • 4 large eggs
  • 0.5 cup cheese, grated (white cheddar or feta)
  • 0.25 cup chopped cilantro or parsley
  • Salt and pepper to taste
  • Pita or French bread, for serving


Preparation: 10 Minutes

Cook Time: 15 Minutes


  1. Preheat oven to 375 degrees F. Place cast iron skillet or oven safe skillet on stove over medium-low heat.
  2. Add oil, onions, garlic and lemon zest. Sauté until onions soften and become golden.
  3. Add jar of marinara sauce, lemon juice and mix. Cook for 2-3 minutes.
  4. Make four small wells in sauce and carefully crack eggs into each one.
  5. Bake for 7-9 minutes until eggs are cooked but yolks are soft.
  6. Remove from oven and top with cheese.
  7. Garnish with cilantro and add more lemon zest.
  8. Serve hot with bread.
