Sweet and Sour Fish Fillet in Spicy Orange Sauce

SWEET AND SOUR FISH FILLET IN SPICY ORANGE SAUCE Ingredients

  • 400 g grouper fillet, or fish fillet
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground pepper
  • 1 egg
  • 80 g tapioca starch
  • 1 Sunkist® Cara Cara orange
  • 1 green chili pepper, chopped
  • 1 red chili pepper, chopped
  • Sweet and sour orange sauce, to taste (See below section for details)

SWEET AND SOUR ORANGE SAUCE Ingredients

  • 1 Sunkist® Cara Cara orange, freshly squeezed
  • 2 tablespoons granulated sugar
  • 2 tablespoons white vinegar
  • 2 tablespoons ketchup
  • 1/2 teaspoon salt
  • 2 teaspoons tapioca starch
  • 1 red cluster pepper, diced

Directions

  1. Cut the fish fillet into pieces evenly. Combine with salt and ground pepper and mix well, marinate for 15 minutes.
  2. Chop the green and red chili peppers into small pieces. Cut the red cluster pepper into small rings. Set aside.
  3. In a small bowl, add the ingredients for the sweet and sour orange sauce and mix well. Set Aside.
  4. Remove peel and all pith from Sunkist® Cara Cara orange. Cut the orange into supremed segments and set aside.
  5. Squeeze another Sunkist® Cara Cara orange for juice.
  6. Add granulated sugar, white vinegar, ketchup, salt, tapioca starch, and red cluster pepper to orange juice, mix well to combine the sauce.
  7. Dredge the fish fillets in egg until well covered and dip them into the tapioca starch to coat them completely. Pan-fry each side of fish fillets over medium-low heat until golden brown.
  8. In a pan, add green and red chili peppers and sauté over medium heat. Add sauce and cook until sauce is thickened.
  9. Add fish fillets and supremed oranges, stir fry to combine.
